Scott's first trip to Texas 1987

Founded in 2025 by food entrepreneur and former “Marshmallow King of Chicago,” Scott Horwitz, BrisketBus BBQ Tours brings a lifetime of barbecue obsession to the roads of Central Texas.

 

Scott's father, Mike — a U.S. Army Reserve veteran — trained at Fort Sam Houston in San Antonio and picked up more than just military skills. He also discovered the magic of smoked brisket.

Mike never liked to fly, so trips in the family roadster was a way of life when Scott was growing up, allowing them to become a family of BBQ hunters — chasing the best barbecue from hole-in-the-wall joints to legendary smokehouses. Whether it was Dixie Pig in Virginia, Johnny’s Smoke Stak in Rolla, Missouri, or The Salt Lick near Austin, Mike’s love for ‘cue left a deep impression on his son.

High School Grads 31 years apart

Scott got to Texas “as fast as he could,” arriving in Austin in 1994 to attend the University of Texas. With tailgating banned at that time, he joined a fraternity and found himself under the culinary mentorship of Jack Burton, a retired Army cook who’d served since 1950, feeding hundreds at a time with ease. Jack taught Scott what Texas BBQ is all about: beef, low and slow, with smoke as the seasoning and sauce as an option instead of a requirement.​

After graduation, Scott became a traveling marshmallow salesman (for real), eventually building a marshmallow empire before the 2008 financial crash ate it up. Along the way, he co-founded a line of brine concentrates called BBQ Bath and Fajita Bath, sold at major retailers like Whole Foods Market, Kroger, and Cabela’s. The amount of meat smoked for trade shows? Well over a ton.

After 9 years as a stay at home dad, then COVID, Scott's life was reshaped as it was for so many. By 2025 Scott found himself back in Austin, looking for his next project, when lightning struck: build a barbecue company, but on wheels!

Combining Scott's love of road trips, storytelling, and Texas BBQ, BrisketBus BBQ Tours launched in the summer of 2025 — a rolling celebration of smoked meat, pitmaster passion, and the great tradition of Texas barbecue.
