Tucked away into a nondescript strip mall on a stretch of busy road in Pflugerville, sits Brotherton’s Black Iron Barbecue. There are a number of enticing flavors coming from the multiple food trucks in the lot, so don’t let the mishmash of smells confuse your nose when you park. Now, it might not seem like much in its humble environs, but they got it where it counts.

Sliced brisket and sausage in a tray with pickles, onions, and two cups of sauce, on a brown paper background.

The brisket was almost sold out when we got there at 1:45, which is always a good sign. The slices were succulent and juicy, cut it with a fork and it fell apart in your mouth. The crust had a nice flavor of its own that balanced the smoky notes. No sauce required, but have some anyway because it’s damn good.

The Jalapeno cheddar smoked sausage is our second favorite overall and we love the presentation. The snap of the casing is a joy to feel and the bubbling little bursts of cheese and all tucked in on their meat pillows are the green spicy bits that give this sausage enough flavor that some of the other smokehouses could take a lesson from.

Appetizing presentation of their creamy mac and cheese in a clear plastic container, with sliced pickles and onions on the side.
The complex flavors in the mac and cheese were very unexpected. Three thumbs up!

The mac and cheese was a breath of fresh air after so many joints where the sides are an afterthought. These white cheddar noodles are a must have with just enough kick to taste, but enough creamy to keep it not spicy.

Only one question: are those homemade pickles?

And after all that, it’s hard to say out loud that the burnt ends stole the show, but here we are. Brotherton’s Black Iron Barbecue deserved its spot in the 2021 Texas Monthly Top 50 and we will be back.

Overall rating: “WOW” with a “wasn’t expecting that.”

They received an honorable mention in the The Best BBQ Joints in Texas 2025: Honorable Mentions. It's not easy to repeat.
